***There are generally two methods to heat flour so that it can be safely used in raw, edible cookie dough and eliminate the risk of germs or contaminants. The simplest method is to heat the flour in the microwave until it reaches a temperature of 74 °C. An instant-read thermometer can be used to check that all the flour has reached this temperature before using it as usual in the edible cookie dough recipe. The second method is to heat the flour in a conventional oven. To do this, spread the flour on a baking sheet with a rim and bake at 149 °C in a preheated oven at 2-minute intervals. After each interval, check the temperature until the flour has consistently reached 74 °C. These steps are necessary because uncooked flour can contain pathogens that are only killed by heating to these temperatures.
