1. Ingredients (for 6 pcs.:)

For the dough:

  1. 50 g spelt flour (type 630)
  2. A pinch of salt
  3. 60 g low-fat quark
  4. 20 ml water
  5. 20 g unsweetened protein powder, e.g. More Protein Cream

For the topping:

  1. 60 g light crème fraîche (14% fat)
  2. 30 g grated light Gouda (30% fat)
  3. 30 g veggie / light ham cubes
  4. Spice blend (e.g. More Spices Herbal Salt or Knobilicious)

Optional toppings:

  1. Spring onions

2. Preparation

  • Knead the ingredients for the dough together, divide into 6 equal pieces and roll into small balls.

👉 Tip: If the dough is too sticky, simply sprinkle with a little more flour and rub thinly all around.


  1. Now press the small dough balls onto a baking mat to form small pizzas with a slight crust.
  2. Mix the crème fraîche with the spices and spread it on the dough.
  3. Top with Gouda and ham cubes.
  4. Bake the piccolinis for approx. 15–17 minutes at 185 degrees Celsius convection oven.
  5. After baking, top with freshly cut spring onions and enjoy best while still warm.
