1. Ingredients (for 2 servings)

  • Spice Mix
  • 3 medium zucchinis (approx. 600 g)
  • 1 carrot, diced
  • 1 red onion, diced
  • Garlic, pressed
  • 2 tsp vegetable broth
  • 50 g tomato paste
  • Cherry tomatoes, halved
  • 400 g canned tomatoes
  • 2 tbsp Pesto, e.g., Foodist

2. Preparation

  1. Remove the ends of the zucchini and use a spiralizer to make "zoodles". Set these aside for now.
  2. Heat a pan with oil spray and sauté the diced onions, carrots, and garlic.
  3. Deglaze with vegetable broth, add the canned tomatoes, fresh tomatoes, and tomato paste, and simmer for approx. 30 minutes.
