Laura's Vegan Glass Noodle Salad

Veganer Glasnudelsalat

Ingredients (1 Serving)

  • 80 g glass noodles
  • 1 carrot
  • 200 g mushrooms
  • 2–3 tbsp soy sauce
  • 1 clove garlic
  • 20 g Light Peanut Creme
  • Spring onions
  • Lime
  • Peanuts for topping

Spices

  • Ginger
  • Chilli
  • Pepper

Preparation

1. Pour boiling water over the glass noodles and let them soak for 10 minutes (when done, rinse briefly with cold water).

2. Briefly sauté garlic in olive oil, then quickly add mushrooms and carrots and mix everything. Add 2 tbsp soy sauce and the juice of the lime.

3. Season with ginger, chili and pepper or other spices as you like. Pour the mixture over the rinsed glass noodles. Top with peanuts.
