Ingredients (1 serving)
- 100 g mixed salad
- 5 ml olive oil
- 50 g pasta of choice
- ½ cucumber
- 200 g cherry tomatoes
- 1 spring onion
- 20 g sun-dried tomatoes (without oil)
- 50 g feta (light)
Dressing:
- 15 g Total Vegan Protein "Unflavored"
- Splash of water
- 10–20 ml balsamic vinegar
- Lemon juice
- Salt, pepper, herbs of choice
- 30 g Pesto Rustica Pomodori Secchi (Barilla)
Preparation
1. Place salad in a large bowl and mix with olive oil. It's best to use your hands to ensure everything is well distributed.
2. Cook pasta al dente. In the meantime, finely chop tomatoes, cucumber, spring onion, feta, and sun-dried tomatoes. Add pasta and the remaining ingredients to the salad.
3. Dressing: Mix the unflavored protein with a little water and the remaining ingredients, then pour over the salad.
