1. Ingredients (for 2 servings)

For the Red Berry Compote:

  1. 250 g Fresh berries
  2. 150 g Fresh sour cherries
  3. 150 ml Water
  4. 1 Lemon
  5. Zerup, e.g., Cherry, Redcurrant or Apple Cranberry
  6. 2 tbsp Cornstarch

For the Vanilla Sauce:

  1. 25 g Protein powder, e.g., More Protein Vanilla Ice Cream (alternatively 25 g More Protein Cream + Flavor powder, e.g., Chunky Flavour Vanilla Perfection)
  2. 200 ml Almond milk, unsweetened

2. Preparation

  1. Wash the berries thoroughly and pat them dry. Halve strawberries if necessary. Wash, pat dry, stem, and pit cherries.
  2. Then dissolve the cornstarch in 6 tablespoons of water until there are no lumps left.
  3. Now wash the lemon thoroughly and cut off a piece of peel about 3 cm long.
  4. Bring the remaining water with the Zerup and lemon peel to a boil in a large pot.
  5. Now add the dissolved cornstarch, stirring constantly, and simmer for 2–3 minutes over low heat. Continue stirring constantly.
  6. Then add the berries and cherries to the thickened juice, carefully fold in, and briefly heat together. If you prefer it a bit thicker, let the compote simmer for a few more minutes.
  7. Remove the lemon peel and transfer the red berry compote to a large bowl.
  8. Immediately place cling film directly on the surface of the hot compote to prevent a skin from forming. Let cool covered.
